The restaurant's signature dish is Dalu noodles (大滷麺), better known in Japanese as taro-men (ターローメン), a distinctive bowl of noodles topped with a thick, glossy sauce rich with savory garlic flavor. Alongside this specialty, Shinchinmi offers a wide range of machichuka staples, from fried noodles and fried rice to Szechuan-style pork stir-fry, dumplings, and mapo tofu. These comforting dishes have kept regulars coming back for decades.
