Kashmir Curry (カシミールカレー) is one of Delhi's signature dishes. Despite its name, it is not a traditional curry from the Kashmir region, but an original creation developed by the restaurant.
It was created in response to customers who wanted something even spicier than Delhi's Indian Curry. To give it its distinctive character, the restaurant developed a remarkably dark, almost black sauce using caramel for added color and depth of flavor. Garlic was also used to mellow the pungent aroma of the chili peppers. The result is an exceptionally spicy curry with a thin, almost soup-like consistency, quite different from the thick sauces commonly associated with Japanese curry.
Interestingly, the dish was originally intended to be called Madras Curry, after the city in southern India (now Chennai). However, the name Kashmir Curry was mistakenly printed on the menu, and the restaurant eventually decided to keep it.
Its popularity grew further as Japanese rice varieties became sweeter, creating an interesting contrast with the curry's intense spiciness.
Today, Kashmir Curry remains one of Delhi's most recognizable dishes, representing the restaurant's distinctive approach to curry-making and its preference for bold flavors and a remarkably light sauce.
